Making Cottage Cheese

After hearing about cheese makinng on an email list I became curious and found a simple recipe for cottage cheese:

Heat up a gallon of 2% milk to 190F
Take off the burner and add half a cup of vinegar and let cool
Strain out curds and mix in salt to taste (around 1/2 teaspoon was recommended).

Here I made a half sized batch which seemed to turn out pretty good for a first try. I also followed the suggestion to use nonfat powdered milk and mix in some cream rather than using 2% from the store (I used 6 cups of milk and 2 cups of cream). I will probably continue experimenting with this and will add to this page if I come up with any enjoyable variations.
