The problem with crabapples is getting them prepared to cook. If they are too far along, they are very soft. This is great for getting the stems off, but makes it hard to pick them without squishing the contents out all over everything. When they are still hard, the stems do not come off very easily. Melissa was helping me out here by cutting the stems off after I had washed the apples.
